PURE TRACEABLE DISTILLING

The Rebel Exile Series (RES) is the first collection of Micro-Batch experimental spirits brought to you by Rebel Rabbet and created in heart of London. The series offers full traceability of ingredients and complete transparency of the distilling process. 

Produced in collaboration with master brewers Anspach & Hobday and The London Distillery Company.

RES1: The Holy Trinity

A fusion of Brewing, Whisky Distilling & Gin Rectification.

Our vision was to build a spirit from the grain up and in collaborating with Anspach & Hobday we've been able to create a unique base wash that is like nothing we've distilled before. 

A&H brewed a 9% non-hopped Saison Wash, fermented for two weeks with Saison yeast. We then distilled the wash into low-wines before running another distillation to a high ABV White Whiskey. Once the liquid was rested for three weeks, we rectified half the liquid with carefully selected botanicals like Cassia Bark, Pink Pepper and Coriander Seed, creating RES1: The Holy Trinity. 

The remainder of the White Whiskey was placed into micro Triple Sec Bourbon Barrels for 6 weeks creating RES2: Misconception.

 

RES2: MIS CONCEPTION

A 9% high gravity Saison Brew, distilled into White Whiskey. Aged in Triple Sec Bourbon Barrels.
